		<description>Yummers -- I just happened to make a very similar dish tonight, but it was more lentils, carrots, lemon, cumin, olive oil... and at the end, I stirred in some cubes of avocado (which, no, I&#039;m not supposed to be eating right now, but a house guest left one in my kitchen and I couldn&#039;t just throw it out). The avocado made it really nice and smooth, almost creamy, and the lemon and cumin were a great match. Also, not a bit of plastic involved in the creation!</description>

I made your borscht recipe this week with 2Tbs tomato paste (from a jar), no vinegar, some homemade borth and maybe a bigger quanity of vegies including beets from our last trip to farmer&#039;s market in November, very yummy.  Thanks for helping me clean out the fridge.  Susan</description>
