Think we can't live without plastic? Think again. In 2007 I committed to stop buying any new plastic & I've almost succeeded! Won't you join me? Let's see what plastic-free looks like in 2012... for the health of our bodies, our oceans, our planet. ~Beth Terry

I stopped buying organic produce for several reasons. One, as you said Cathy, it all is wrapped in plastic. Second, being in NY our produce comes from CA, which means it has travelled 3000 miles to get here.

I am more concerned with buying local foods at this point. That will mean more canning and freezing this year. Unfortunately, seafood is out unless I get local trout or bass.

I am a student at an agricultural college, and one of the things I hope to start are home ec courses teaching people how to put food up for the winter without fussing too much. Things like when you buy sweet corn in the summer, buy twice as much and freeze the extra; no extra energy or time used to blanch the corn and it takes all of 5 minutes to cut the corn off the cobs and freeze them. Do this every time you buy corn and you will have enough for most of the winter.

Food is so important since most of our oil use and greenhouse gases come from our food. Between transportation, cultivation, pesticides, fertilizers, and packaging, the food industry sucks vast amounts of oil from our reserves and spews it into the environment. Add in livestock (cow farts really add up!) and the pollution from the ag industry is massive.

Gets really overwhelming.

I am floored, though, when I go to a health food store how many so called organic companies use plastic packaging.

I found out the other day that my local health food store uses so MUCH plastic and styrofoam in the veggie dept. because they can't be bothered to separate the organic from the conventional produce. That means (to them) that the organic stuff has to be wrapped to keep it from being contaminated by the sprayed stuff. Oh. my. god. I asked them if they needed help re-organizing the produce section. They didn't think that was funny.

Lovely recipe. Can't wait to try it.

Would you consider sending me a PDF or some such copy of your presentation materials for use in my own mission here. I have actually had angry phone calls from people upset with me for suggesting that their plastic packaging is harmful. I guess that means that I am ruffling some feathers in the wholistic health retail community! I think I now have to do consumer and producer education, and want to come up with a What's Wrong With Plastics? seminar.

Love & RRRevolution, Tracey

PS My Non Toxic Woman Workshop for tonight sold out weeks ago!!!
