OfflineI've been buying bulk farfalle and spiral pasta for more than a year now, but have been craving ravioli, which I can't find plastic-free. So….I made my own! Yup, homemade ravioli (flour & semolina bought in bulk) filled with beets from my garden & homemade "ricotta" (only the caps from the glass milk & vinegar bottles), with a sauce of brown butter/sage and a side of sauteed veggies from the garden. I don't have a pasta machine but am thinking about a hand-cranked one, since my arms are still sore…
Does anyone have any recommendations on a (not too $$) plastic-free pasta roller? My new kitchen is kind of short on storage space, so I'd like something fairly compact. Or should I just keep working the triceps w/ the good old rolling pin?
