Yes, it's possible! And since learning to make it in my cooking class in Rome, I was determined to give it a try once I got home, since it is waaaaaaaaaaaaaay better than anything I've ever eaten here. Eggs, sugar, cocoa powder, shaved dark chocolate, coffee/espresso...no problem on these ingredients, since they are readily available plastic-free. The challenge was (1) ladyfingers and (2) mascarpone.

(1) Ladyfingers are surprisingly easy to make (eggs, sugar, flour, baking powder) and once you've made them, you'll not look for those sad store-bought ones again. I admit to buying a plastic-coated pastry bag for this, but it'll last for years, and beyond. Best recipe: http://allrecipes.com//Recipe/.....ismetric=0

(2) Mascarpone is even easier to make and only uses a tiny bit of plastic (the bottle cap & ring). Heat 2 cups heavy cream to 180 deg., (just short of bubbling) add 1 Tbs lemon juice or apple cider vinegar, simmer for 5 min, pour into a large coffee filter set in funnel/strainer over a jar (to catch the few tbs of whey drippings), refrigerate for 8 hrs and voila! Delicious mascarpone, which opens up a whole new world of cooking possibilities!!! Also, this is a great substitute for cream cheese.

As for the tiramisu...how easy is this??? Light, satisfying, and guilt-free...mostly.

Dip ladyfingers into leftover cold strong coffee (or espresso, if you have it) and put in a single layer in serving dish (I use a lasagne pan). Shave some dark chocolate over them. Whip 4 egg yolks with 1/4 c sugar for 7 min. until pale yellow and thick. Add mascarpone and slowly work it in by hand (no mixer) until any lumps are gone. Whip 4 egg whites with 1/4 c sugar until stiff peaks form. Fold white into yolk/mascarpone mixture gently until well mixed. Pour over ladyfinger layer, gently agitate to spread, and refrigerate for 3-4 hrs. Dust with a good cocoa, serve, enjoy, sit back & wait for the compliments (if you can stand to share).
